I have made these twice now. The first time I rolled them into 2 inch balls and the second time I made a double batch and pressed the dough into an 8×8 pan for bars. Both were really good. Balls are fun, bars are not as scary for non Paleo people.

No Bake Coconut Snowball or Bars

1 3/4 cup unsweetened shredded coconut
3 tbsp coconut oil
4 tbsp maple syrup (the real stuff no Aunt Jemima)
4 tbsp coconut milk
1 tsp vanilla extract
1 tsp cinnamon
pinch of sea salt
1/2 cup almond butter
2 scoops protein powder
3 tbsp unsweetened cocoa powder

Mix the coconut and the melted oil together in a bowl. Then add the maple syrup, coconut milk, vanilla, cinnamon, and salt. Then add the almond butter, protein, and cocoa powder. Mix until everything is combined. Roll into balls then into coconut shreds and lay on tray, or press into pan and sprinkle on coconut. Put in fridge for an hour before eating. Store in fridge.
